Are you hosting a summer get together? Tired of serving the same old summer treats such as popsicles and watermelon slices? We here at Cheap But Chic have the summer treats you are looking for.


Beach Ball Ice Cream Sandwiches-

  • 3 tablespoons butter
  • 1 ½ cup sugar
  • ½ teaspoon vanilla extract
  • 1 to 2 tablespoons 2% milk
  • Red, yellow, blue and green food coloring
  • 48 round sugar cookies
  • 1 quart vanilla ice cream, softened



  1. Combine sugar, butter, vanilla, and milk into a small bowl
  2. Take 5 bowls and contribute 1 bowl for each color food coloring (leave one plain)
  3. Frost half of the cookies into beach ball look a-likes. Leave the rest plain
  4. Spoon some ice cream onto the plain cookies
  5. Top them with the frosted cookies and place into the freezer until served

Watermelon Rice Krispies-


  • 3 ½ tablespoon salted butter
  • 6 cups mini marshmallows
  • Green and pink or red food coloring
  • 5 cups of Rice Krispie cereal
  • 2 ¼ cups mini chocolate chips
  • Round cake pan
  • Non stick spray
  • Sauce pan
  • Wooden popsicle sticks



  1. Spray the round cake pan with a non stick spray
  2. Melt 1 ½ tablespoons in a saucepan over medium-low heat
  3. Add 2 ½ cups marshmallows and green food dye to the pan. Stir until marshmallows have melted.
  4. Turn off the heat. Add 2 cups of Rice Krispies
  5. Pour the mixture around the edges. Let cool


  1. Repeat steps 1 and 2
  2. Repeat step 3, but pour in red or pink dye instead of green
  3. Turn off heat and let cool
  4. Pour the mixture into the rest of the pan (middle)
  5. While hot, lightly press the chocolate chips into the red/pink area
  6. Let cool
  7. Cut triangle pieces and stick a stick into each one
  8. Serve and enjoy

  • 3 packages blue jell-o
  • 1 package instant pudding, French Vanilla
  • 1 cup milk
  • 1 box vanilla Wafers, finely crushed
  • 1 container of Cool Whip
  • Small, clear cups


  1. Follow the steps and create the jell-o and pudding
  2. Pour the blue jell-o in a cup
  3. Refrigerate for about 4 hours
  4. Spread a thin layer of Cool Whip on the jell-o
  5. Pour a whole box of the Crushed vanilla Wafers on the Cool Whip
  6. Decorate with some gummy flip flops, or a peppermint beach ball, or even a paper umbrella
  7. Enjoy
