2 cups vanilla bean ice cream
1/4 cup half-and-half
5 drops peppermint extract
5-6 drops green food coloring
Whipped cream, for topping
1 maraschino cherry, optional
In a blender, combine ice cream, half-and-half, peppermint extract, and food coloring, and blend for 30 seconds.
Pour into a tall glass, top with whipped cream, and garnish with a cherry.

Lucky Charm Marshmallow Treats
use two 8×8 in pans
Four ingredients + less than 10 minutes = easiest, marshmallowy, most colorful dessert
All you need is Lucky Charms cereal, salt, butter, and marshmallows!
Then all you do is melt butter in a large pot, stir in salt and marshmallows until melty, and then stir in the Lucky Charms cereal.
Festive and edible, these are creative with marshmallow and cookies
Leprechaun Hat S’mores
Keebler Fudge Stripes Cookies, Large Marshmallows, Green Sprinkles, milk/dark and green Chocolate Candy Melts
Melt chocolate candy in the microwave, in 30 second intervals. Stir after heating. Dip Fudge Stripe Cookies into chocolate, coating completely. Set on parchment paper, top side down, until candy coating is completely set.
Using a toothpick, dip marshmallow into chocolate and coat almost entirely. Set on parchment paper, until candy coating is completely set. Remove toothpick.
Melt green candy just as you did the chocolate. Flip marshmallow upside down and insert new toothpick in top. Dip into green candy to create a small band of green around the bottom.
Coat green candy band with sprinkles or sparkles.
Place marshmallow in center of chocolate covered cookie. Carefully remove toothpick. Touch up the toothpick hole with a small dab of melted chocolate.
To finish the hat, attach a glittering shamrock with a small dab of melted green.
Fun and simple Rainbow Waffles
Waffle batter mix
Food coloring (as many colors as you want to make)
Whipped cream and or syrup
Small candies, cereal or sprinkles
Using your waffle batter recipe or boxed batter mix batter, prepare the waffle batter as directed.
Divide your batter into 4-6 (depending on how many colors you would like to work with) small mixing bowls or cups.
Add several drops of food coloring to each bowl
Transfer your colorful batter mixtures from the bowls into several different food safe decorating squeeze bottles or piping bags
Heat up your waffle iron and spray generously with non-stick cooking spray.
Starting on the inside of the iron and working out, take your first color and make a small circle of batter in the center of the iron. Then repeat with the next color, tracing a circle around your first color, working outwards..
Cook as directed according to the directions on your recipe or box.
Once the waffles are cooked completely, pop them out of the waffle iron and onto a plate. Top it all off with sprinkles, small candies, colorful cereal or fruit for the “treasure” at the end of the rainbow.
